Green Salad with Chicken, Marrowfat Peas and Kale

Vibrant, filling and delicious, this Super Green Salad with Chicken, Marrowfat Peas and Kale is the perfect lunch. Crispy pea shoots, toasted pumpkin seeds, charred sweetcorn and kale crisps add texture, while the Marrow Fat and Mushy Peas add a fresh sweetness and glorious green colour.

Ingredients

50g Batchelors Marrowfat Peas (drained)⁠
50g chicken breast
10g pumpkin seeds
75g charred sweetcorn
20g pea shoots
15g corriander
15g mint

Kale Crisps
50g diced kale
5ml rapeseed oil
2g sea salt

Vinaigrette
80g Batchelors Mushy Peas⁠
100ml white wine vinegar
250ml rapeseed oil
15g wholegrain mustard
5g Dijon mustard
3g salt
1g black pepper
5g brown sugar

Method

  • For the kale crisps:⁠ Mix the kale and the rapeseed oil together.⁠ Place kale on a non stick baking tray and sprinkle sea salt over the top.⁠
  • Pre-heat the oven to 130C and bake for 10 – 15 minutes or until the kale is crispy but still green in colour.⁠ Allow to cool to room temperature and then store in an airtight container.⁠
  • For the vinaigrette dressing:⁠ Whisk the Batchelors Mushy Peas, white wine vinegar, wholegrain mustard, Dijon mustard, salt, cracked black pepper and brown sugar together in a bowl⁠.
  • Slowly add the oil while whisking the ingredients. ⁠Whisk the dressing until all ingredients are incorporated together⁠.
  • For the charred sweetcorn:⁠ Place drained sweetcorn in a dry non-stick pan and cook on a medium heat until the corn starts to blacken and char – keep the corn moving around to get an even effect⁠.
  • To serve:⁠ Use the picked herbs and pea shoots to form a salad base, drizzle over some of the dressing⁠. Add on some of the drained marrowfat peas and pumpkin seeds⁠. Top with the chicken and kale crisps. Drizzle over some more of the vinaigrette dressing.⁠
